Potato Salad Day 17

Hi, everyone. I am posting this potato salad because it is a highly demanded item when we are invited over for a barbecue. First, I have to say I think my husband set me up today to make this. We were invited to a barbecue and I asked what we could bring, my cousin said nothing then he said, well, you could bring that potato salad Bill always talks about. Bill had just been over to my cousins.

I do not eat store potato salad. I learned how to make this from my mom. My mom puts raw onions in hers and I do not. I hate raw onions.

Items you will need:

Potatoes, Eggs, carrots, radishes, green peppers, Miracle Whip, Mustard, Sugar

The night before the barbecue I boiled the potatoes until they’re done but not smooshy.  Once I have boiled them I put them in a bowl with a lid and put in the refrigerator. I also boiled the eggs and shelled them  and put them in the refrigerator.

When I am ready to prepare my salad, I cut up the potatoes and eggs and mix them together.

I then take my green pepper and dice it up along with radishes and carrots. I use a knife on my green pepper but use a small food processor on my radishes and carrots.

Mix all together and set it aside. You will then need a bowl, Miracle Whip, Mustard, and Sugar.  In the bowl, I put in the amount of Miracle I think is needed for the size of bowl I have of potato salad. I then stick some mustard in there, which is used for coloring, I then add sugar slowly. When you adding the sugar you can taste it as you go to get the taste you want. I get mine sweet but you have to be careful adding sugar. If you add too much you will end up with gritty dressing. Now it is ready for the refrigerator until the barbecue.

To give you an example of the amount of sugar I used, the bowl above I used 3 TBS of sugar.  If you get too much sugar, just add some more miracle whip.  When I first started making this I was a mess. Let me tell you how I messed up so you don’t make them mistakes.

When I boiled my potatoes I boiled them for two long so it was mash potato salad. I tried again and this time, I got the potatoes right but I didn’t put them in the fridge and when I went to mix the stuff it mashed them again :(.

Tried to make it again and I got too much sugar in my mix because I do not like the taste of the mix at all and was trying to make it better. I do not use miracle whip only for this potato salad.
