Mexican Chicken

Mexican Chicken is one of my family and friends favorite. I like this recipe because it can be made up the day before and put in the refrigerator until the next day when you are ready to bake.  I make two cake pans because one has jalapenos and the other does not. You will  need the following for this recipe: ( please boil your chicken ahead of time and keep 2 cups of the broth)

This recipe is for one 13 X 9 cake pan.

2 chicken breast

1 can of cream of mushroom soup

2 cups of chicken broth ( I get that when I boil my chicken)

jalapeno ( how many will depend on how spicy you want it, I use about a level tablespoon)

1 bag of nacho cheese Doritos

15 or less slice cheese

To begin with you will want to boil your chicken breast until fully cooked. Save your chicken broth, you will need two cups.  Once your chicken has boiled, cooked and cooled, you will tear it apart and place in a bowl.  You will now dice up your jalapeno real fine. Then add mushroom soup, 1 cup of broth, and jalapeno to the shredded chicken.

Shred Chicken and place in a bowl.

Add Mushroom soup, Jalapeno’s, and 1 cup of chicken broth the shredded chicken.


Set the bowl aside and take your Doritos and crush them real fine. I leave them in the bag unless it rips then I add them to a zip lock bag and crush them with my hands the best I can. Once you are done crushing them you add 1 cup of chicken broth into the bag of crushed Doritos. Please keep in mind there could be some leakage so I keep the bag over my prepared pan. I then squeeze the bag to a little to get the broth on all of the Doritos.

Pour the crushed Doritos into the prepared cake pan, I use a fork to spread them out and push them down a little.

Place your chicken mix in the pan and spread evenly. Place your slice cheese on top of the chicken mix. Now you are all ready to bake it. Bake at 350 degrees until cheese is fully melted and Mexican Chicken is hot.

I love to make this up the day before a busy day. If you use paper plates then your clean up is super easy. I do hope your family loves this as much as mine. I do have to stop making this for a while because I do get burnt out on it. The kids never get tired of it.


There is an original recipe out there somewhere but I changed almost everything about it and this is how we like it. My mom showed me this when we were visiting and I made it to our liking. My mom and sister also make there like this now and do not use the original recipe at all.


We have used different kinds of Doritos and if you’re not big on Cream of Mushroom soup you can use cream of chicken. I love to take a recipe and change it several times until it is perfect for my family. If you make changes, please come back and share them with us. Your changes may be better than mine 🙂
