Our Breakfast Burritos

So I am going to share this recipe that I think you will love. Everyone loves these and I hope you enjoy them as much as everyone else.

I have never had a breakfast burritos from a fast food place, but I am told these are better. Give them a try and let me know what you think.

This makes about 10 burritos maybe a little more.

You will need:

1} one bag of tater tots {we deep fry ours and like them a little crispy}

2} A package of bacon that has been cooked. Again we like ours crispy

3) 10 eggs

4} Shredded cheese ( I get the Mexican shredded cheese)

5} Soft flour tortilla shells

Once you have the tater tots deep-fried and the bacon cooked crispy, you put them in a pan. I pull my tater tots apart when putting them in the pan with the bacon. I do not put any butter or grease in this pan.

Beat your 10 eggs in a bowl and have your pan getting hot while you are doing this. Once the eggs are beaten and your pan is warm, mix the eggs in with the tater tots and bacon.

Cook until egg is done and then put it on warm and keep an eye on it.

Get another fry pan and put a little butter in it while it is hot. Cook shell in butter on both sides. I like to butter the shells then put in a hot pan.

Once the shell is done, put the desired amount in the shell, add cheese and hot sauce if you like then enjoy.

I know others that use my recipe and they will make these and freeze them until they are ready for them. They then microwave them. I know others that use sausage instead of bacon.

We enjoy these the most when the tater tots are crispy and so is the bacon. Not everyone will like the crispy so you can choose to make them crispy or soft.

When you are heating your shells be careful because if you leave them too long they will get brown and not be all that great. I just get shells hot and the butter makes them taste so good.
